Single vineyard – The Waterford range is well known for terroir specific wines. In this case the Pinot Noir is carefully sourced from a single vineyard in Elgin, the best suited terroir for the growth of Pinot Noir, with a slightly cooler climate than Stellenbosch. Once the grapes are harvested, they are transported to Waterford Estate for vinification. A very natural approach is followed in order to best express the characteristics of the surroundings of the vineyards. When compared to previous vintages, the 2017 Pinot Noir vintage has a modern edge. The drought meant that the winemaking team had more control over the growth and ripening of the vineyards, helping them to produce a fresher wine.
