SALT's culinary journey is rooted in the art of salting, where ancient methods intertwine with contemporary cooking. The chefs expertly blend traditional salting techniques with modern culinary innovations, crafting dishes that excite the palate and tell a story.

Guided by the expertise of Chef Patron’s Craig Cormack and Beau du Toit, along with Head Chef Brent Williams, every ingredient is meticulously transformed, allowing the menus to come to life. Together, they share a passion for SALT and epicurean adventures, inviting guests to indulge in a culinary journey that beautifully pairs with our exquisite wines.

Meet the chefs behind our culinary journey

At the helm of SALT are Executive Chefs Craig and Beau, alongside Head Chef Brent - a trio of culinary talents dedicated to delivering a remarkable dining experience. Craig's 36-year career across Southern Africa led him to embark on a new adventure in 2019, driven by his passion for collecting salts, which became the foundation of SALT's innovative culinary vision. Chef Beau, inspired by his Michelin-star experience in Thai cuisine, brings a dynamic edge to The SALT Road. His expertise in curing, brining, smoking, and fermenting adds complexity to every dish, showcasing the finest locally sourced ingredients. Brent likes to focus on simplicity, ensuring that excellent and locally sourced produce remains the star of the show. Together, Craig, Beau, and Brent offer hyper-seasonal menus that reflect a philosophy of maximising every ingredient, ensuring that each dish is a celebration of flavour and quality.

"Waterford hosted over 190 ladies in their beautiful, intimate courtyard for a delightful event. The thoughtfully selected three-course menu, paired with their exquisite wines, truly impressed us! The starter featured a light and flavourful tomato-based salad. The main dish was a pleasant surprise—pasta with chicken breast cooked to perfection and served hot. "Waterford Estate has always held a special place in my heart. The estate is stunning, and their wines are delicious - and I’m glad to say they’ve only gotten better since my last visit. This time, I brought my wife for her birthday to SALT at Waterford, and it was an unforgettable experience. The restaurant takes full advantage of the beautiful courtyard, with tables positioned perfectly to give everyone a scenic view. Of course, no visit to Waterford is complete without tasting their wines, so we opted for a tasting alongside our lunch. They offer various tasting options, but we chose one with a wide selection of wine styles, including three wines paired with artisan chocolates. Lunch at SALT was incredible - a must-experience for everyone. Each dish was beautifully presented and delicious! Our standout dishes were the Swordfish, Hantam Rack of Lamb, and Grilled Beef Rib Eye, though I doubt you could go wrong with any choice. I also loved the variety of salts on the table, which added a unique touch to the meal. Our waiter made the experience even better. From the warm welcome at the door to his attentive, friendly service, he was outstanding, and his wine knowledge added an extra layer to our tasting. My wife and I would like to extend a huge thank you to Chef Beau du Toit and the entire team for making our time at SALT so special and memorable."

"We stopped by during our wine-tasting tour without a reservation, hoping to grab some food as well. Initially, it seemed they’d stopped serving food for the day, and we’d only be able to do the wine tasting. However, a lovely lady offered to check with the manager and kitchen staff to see if they could make something for us. To our delight, she quickly returned to let us know they could prepare a small selection of dishes to accompany our wine tasting. How amazing and flexible of them! We were seated in a beautiful, airy private room, where we enjoyed both the wine tasting and the delicious food. Malaika took wonderful care of us—she was friendly, professional, personable, and efficient. Truly a gem and a fantastic ambassador for Waterford. We weren’t rushed at all and thoroughly enjoyed our time. The food portions were generous and very tasty, and prices were quite reasonable. I would absolutely return and highly recommend Waterford to others. Thank you for hosting us—it was exceptional service!"
