Tasting Notes

This wine presents a ruby-red core with subtle hints of ageing visible along the rim, a testament to its future potential even after ten years of ageing. The nose is elegantly layered, showing leather, cigar box tobacco, and liquorice. Black fruit notes of mulberries mingle with cedar spice, a hallmark of precise oaking. A delicate herbaceous fynbos character underpins the nose, adding a uniquely South African touch and showcasing the Helderberg Mountains terroir. On the palate, classically integrated tannins provide structure, while vibrant acidity lifts the mid-palate. The palate follows the nose seamlessly as the fruit character leads to the umami-rich development. The finish is long and mineral-driven, with a fresh lift and lingering fruity tannins that underscore the wine’s precision and balance. This wine showcases both its youthful vitality and the ageing potential that speaks to the vineyard’s exceptional quality and meticulous winemaking.

Vinification

Crafted from the top parcels of the Spring Vineyard block, the grapes from this single vineyard on Waterford Estate were meticulously hand-harvested, destemmed but not crushed. After sorting, the whole berries were fermented in vessels for about 18 days. Following fermentation, the wine was pressed and transferred to selected French oak barrels for malolactic fermentation and ageing. The wine is kept separate from blending to showcase the pure and unique terroir of this site.

Vineyard

The Spring Vineyard, a warmer vineyard, higher up the Helderberg Mountain, is planted with a north-south row direction. This row direction catches sun throughout the day on both sides of the rows allowing for a thorough ripening of each bunch. The soil of this vineyard can be characterised by decomposed sandstone with a granitic base, offering great minerality and structure to the wines grown in this soil.
