The Library Collection Noble Late Harvest Viognier showcases a luxurious profile with enticing aromas of nutty honey nougat and delicate nectarine citrus, complemented by a rum and raisin nuance that highlights the wine’s fruit-forward nature. On the palate, the wine reveals its depth and complexity, with vibrant acidity balancing its natural sweetness. Rich notes of burnt sugar and an almost crème brûlée character, shaped by six years of barrel ageing, lend a rounded and rich profile. The palate seamlessly follows the nose with layers of honey, nectarine, and a hint of nuttiness. The finish is long and refined, leaving a lingering floral honey note that enhances the wine’s elegance.

We pinched the stems of the bunches to induce raisining on the vine. The grapes were then picked at the desired sugar level and destemmed into a concrete egg to soak on the skins and ferment, extracting the sugar and imparting the telltale noble late character. The extended contact with the skins enhanced the wine’s complexity. This careful process preserved the freshness while developing rich, concentrated flavours. After four days, the wine was pressed and transferred to barrel, where it underwent a slow fermentation process over two months. Fermentation naturally stopped, and the wine matured for six years, creating texture and depth.
The term “noble” refers to the influence of noble rot (Botrytis cinerea), a beneficial fungus that plays a crucial role in the creation of exceptional sweet wines. This natural process concentrates the sugars, acids, and flavours in the grapes, enhancing their complexity. To encourage Botrytis, the “late harvest” technique is employed, where the grapes are left on the vine longer than usual, allowing them to fully ripen. This extended ripening period creates the perfect conditions for the fungus to develop. As Botrytis works its magic, the grapes achieve higher sugar levels, which ultimately sets the stage for a rich, concentrated wine with intense, layered flavours.
